Knowing the extreme harm meat and dairy are causing to our bodies, plant-based diets have continually proven to be the healthiest way to live. Two of our favorite plant-based recipe resources are below, Minimalist Baker and Hot For Food. From a vegan "Big Mac" to jackfruit tacos, anything you could possibly want to recreate or discover can be found between these two blogs. As we know, the human body's ability to adapt is unparalleled - once you begin eating plant-based for a few weeks, your body will re-align its taste for food in order to crave the food you should actually be eating. Before you know it, the idea of meat and dairy will be so unappetizing that you'll never look back.

> Kale Salad w/Tahini Dressing & Crispy Chickpeas
Even those who least like the taste of kale are sure to be converted after this meal! The dressing is the real secret, transforming the taste of kale into something else entirely. Crispy chickpeas serve as a very filling base - like croutons, but better. When prepared right, kale makes the perfect addition to smoothies, salads, breakfast scrambles, and dips. It’s heartier than other greens such as spinach, and leaves you feeling full and satisfied.

You know those nights when you just feel like a big mac? This tasty, guilt-free, healthful alternative is made using gardein's ultimate beefless burger patties and fieldroast's chao cheese, plus a quick "big mac" dressing made from vegan mayonnaise (recipe follows). When it comes to vegan mayo, we really like earth island (follow your heart) to make any dips and sauces where we're adding our own flavors and ingredients to it.

When in doubt, put it in a taco. This recipe is fresh, light, and not too spicy. It's just spicy enough coming from someone who can't handle too much spice! The adobo cream sauce complements the flavors perfectly, while the textures & tastes created by blending the poblano peppers/jackfruit are absolutely incredible. Enjoy the sauce or have leftovers? If you're looking for room-temperature meals that don't require much heat and are portable for picnics, BBQs, and dinner parties - we have you covered! Inspired by MinimalistBaker's Macadamia Ricotta, the cheesy flavor in this recipe comes from nutritional yeast, which is a vibrant yellow yeast that’s packed with vitamin B12. Delicious and healthy? Yes, please!

> Spaghetti Squash Pasta with Basil Pesto
As someone who has a strong distaste for squash and thus never tried spaghetti squash, I was blown away at the fact I actually liked this. The texture of spaghetti squash is tender and the flavor is subtle, lending itself extremely well to pasta sauce and pesto. The vegan pesto with sun-dried tomato gets mouthwatering results - this pesto is full of flavor and distributes beautifully throughout the “noodles,” for a light-yet-satisfying dish.

Again, no rules when it comes to tacos - just let your imagination run wild and use up leftovers to stuff your tacos.
