> Kale Salad w/Tahini Dressing & Crispy Chickpeas
Even those who least like the taste of kale are sure to be converted after this meal! The dressing is the real secret, transforming the taste of kale into something else entirely. Crispy chickpeas serve as a very filling base - like croutons, but better. When prepared right, kale makes the perfect addition to smoothies, salads, breakfast scrambles, and dips. It’s heartier than other greens such as spinach, and leaves you feeling full and satisfied.


> The Vegan "Big Mac"
You know those nights when you just feel like a big mac? This tasty, guilt-free, healthful alternative is made using gardein's ultimate beefless burger patties and fieldroast's chao cheese, plus a quick "big mac" dressing made from vegan mayonnaise (recipe follows). When it comes to vegan mayo, we really like earth island (follow your heart) to make any dips and sauces where we're adding our own flavors and ingredients to it.


> Roasted Poblano & Jackfruit Tacos w/ Adobo Cream Sauce
When in doubt, put it in a taco. This recipe is fresh, light, and not too spicy. It's just spicy enough coming from someone who can't handle too much spice! The adobo cream sauce complements the flavors perfectly, while the textures & tastes created by blending the poblano peppers/jackfruit are absolutely incredible. Enjoy the sauce or have leftovers? Throw together some adobo chili macaroni & cheese

> Spaghetti Squash Pasta with Basil Pesto
As someone who has a strong distaste for squash and thus never tried spaghetti squash, I was blown away at the fact I actually liked this. The texture of spaghetti squash is tender and the flavor is subtle, lending itself extremely well to pasta sauce and pesto. The vegan pesto with sun-dried tomato gets mouthwatering results - this pesto is full of flavor and distributes beautifully throughout the “noodles,” for a light-yet-satisfying dish.


> Easy Vegan Tacos
Again, no rules when it comes to tacos - just let your imagination run wild and use up leftovers to stuff your tacos. If you want to know some fast and furious toppings you can make, Hot For Food lists them in the article as well as the best way to season veggie ground round as seen in the video. Of course, your excuse to eat tacos comes around every Tuesday (#TacoTuesday), but we won't judge you if it's always Tuesday in your world.
